Alaska pollock or walleye pollock (Theragra chalcogramma) is a North Pacific species of the cod family Gadidae. While related to the common Atlantic pollock species of the same family, the Alaska pollock is not a member of the same Pollachius genus. The Norwegian pollock (Theragra finnmarchica), a rare fish of Norwegian waters, may actually be the same species as the Alaska pollock. From Wikipedia under the

Q. I bought some Alaskan Pollock, but no matter how I try to cook it, it comes out unpleasnt, rubbery. I've tried cooking it in soup directly, defrosting it in the microwave and in water in the fridge, but no luck. Is there any way for me to cook this and have it taste nice? Keep in mind you may have pollock that is 'freezer burned' ,in which case you will get that rubber feel anyway. I have probably eaten a literal ton or 2 of cod and pollock in my time. Being 1 who never wastes fish ,(freezer burned or not) I love to pan sear it in grapeseed oil while still a bit firm from the freezer. Also oven or grill baked in foil with butter or lard . Something that i was taught by some AK natives for freezer burned fish was to fry it up hard in grease with sea salt like bacon and have it with many beer. Not bad.
