Best way to cook cod?
Q. I'm making a dish of brown rice, steamed vegetables, and some fish. I bought some Alaskan cod and I would like to know the best way to cook it in this instance.

A. Cod is fairly versatile. But, it is a tender wonderful fish that can be hard to grill.. unless you have a grilling rack for fish, and even then.. it can overcook and flake away. Pan searing is awesome. You can do it plain. Or, put a plate or a plastic gallon zip-loc with white flour, some salt, pepper, granulated garlic and if you want, paprika. About equal amounts for each item.. 1 teaspoon of each.. for example. Or if you really don't want to taste garlic, but want depth of flavor, use less garlic. Let the fish become coated, then shake the loose stuff off. Place it in a hot skillet with a couple tablespoons of butter and a couple tablespoons of olive oil. Sear quickly on each side. How safe is Gulf Shrimp in terms of methylmercury and PCBs?
Q. I'm interested in hearing how safe shrimp is compared to cod, orange roughy, farmed salmon, wild alaskan salmon, etc. Is there an online guide that lists all fish according to their safety, especially in terms of PCB levels? I live in Corpus Christi, Texas, so is there an online source that can tell me about methylmercury/P CB levels in the Corpus Christi Bay? Thanks!!

A. Any of them provide excellent sources of Omega-3 fatty acids. In my personal research, the most trustworthy brand is Nordic Naturals. They use a Patented technique to ensure that the fish oil is not contaminated with toxins and heavy metals that accumulate in the fat tissue of these fish. You only need to supplement Omega 3. You absolutely do not need to supplement with Omega 6. The reason for this is that animals allowed to eat a natural diet have an Omega 3 to Omega 6 ratio of 1 to 1. In animals fed pure corn diets (which is how it's done these days) the Omega 6 is out of balance by as much as 40 to 1. This has a pro inflammatory and pro clotting effect. Increase your Omega 3 intake.

severe stomach pain after eating any type of fish?
Q. Finding time to go to the doctor these days, seems impossible, so here I am... This has happened every time I have eaten some type of fish/seafood in the past 6 months. A while back I was out and about and ate some Fried Cod- about an hour later I had this horrible cramping and severe pain in my stomach. It finally passed a few hours later (note- I ate a very small amount this time). The next episode was with Salmon- we had smoked it for hours and probably within 30 minutes of eating I was hunched over in the fetal position in extreme pain. We were out of town at this point and had to drive home. Any bump in the road was awful. Now come Memorial Day.
