The sablefish, Anoplopoma fimbria, is one of two members of the fish family Anoplopomatidae and the only species in the Anoplopoma genus. In English it is also called sable (USA), butterfish (USA/Australia), black cod (USA, UK, Canada), blue cod (UK), bluefish (UK), candlefish (UK), coal cod (UK), gindara (Japan), and coalfish (Canada), although many of these names also refer to other species. The sable fish is found in muddy sea beds in the North Pacific at depths of 300 to 2,700 m (1000 to 9000 ft) and is commercially important to Japan. The white flesh of the sablefish is soft-textured and mild flavored. It is considered a delicacy in many countries. When cooked its flaky texture is similar to sea bass. But, it is a tender wonderful fish that can be hard to grill.. unless you have a grilling rack for fish, and even then.. it can overcook and flake away. Pan searing is awesome. You can do it plain. Or, put a plate or a plastic gallon zip-loc with white flour, some salt, pepper, granulated garlic and if you want, paprika. About equal amounts for each item.. 1 teaspoon of each.. for example. Or if you really don't want to taste garlic, but want depth of flavor, use less garlic. Let the fish become coated, then shake the loose stuff off.
